Ingredients

  • 4 salmon fillets
  • 2 medium sweet potatoes, cubed
  • 12 oz green beans
  • 2 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • Salt and pepper

Method

  1. Roast sweet potatoes with olive oil, paprika, salt, and pepper at 425°F for 15 minutes.
  2. Whisk mustard, maple syrup, and vinegar. Add salmon and green beans to the pan.
  3. Brush salmon with glaze and roast 10–13 minutes until flaky.
  4. Serve with extra lemon and pan juices.
